One-Pan Chicken & Potato

- 2 cups chicken stock
- 3 cups cooked potato; chunked
- 2 cups cooked chicken chunks
- 1 bell pepper diced
- 1/2 onion, diced
- 2 Tbsp. Lake Superior Instant Salsa
- 2 Tbsp. fresh parsley chopped for garnish
Heat pan to medium heat. Add chicken stock and warm. Add chicken, potatoes, bell pepper, onion and seasoning. Cook until heated through and peppers are still al dente and the stock is almost completely soaked up by the ingredients (about 20 minutes). Garnish with chopped parsley. Serve immediately.
